Recipes we have tried and love.
RUBS
Basic Rub
2 Tablespoons Kosher or Sea Salt 1 Tablespoon Cracked Pepper 1 Tablespoon Garlic Powder 1 Tablespoon Onion Powder 1 Teaspoon Cayenne Pepper less if you don't like the heat.
Mix together and rub on your favorite meat.
This rub can be used on any meat, we have used it on Beef, Pork and chicken.
Pork, Rib, Butt and Shoulder Rub
1/2 cup brown sugar
1/2 cup cane sugar
1/2 cup kosher salt
2 tablespoon celery salt
2 tablespoon seasoning salt
1/3 cup red paprika
2 tablespoon chili pepper
2 teaspoon black pepper
2 teaspoon cayenne powder
1 teaspoon granulated garlic
1 teaspoon granulated onion
Hot Wing Sauce
2/3 Stick of unsalted butter 1 Teaspoon garlic powder 1 Teaspoon Worcestershire sauce 1 Tablespoon vinegar 1 Cup Fank's Red Hot Sauce
Bring all ingredients to a light boil and toss wings in sauce
Speedie Marinade
1 Teaspoon Salt1 Teaspoon Pepper 2 Teaspoons Parsley 1/2 Teaspoon Oregano 2/3 Cup of Oil (Vegetable, Olive or Canola) 1/3 Cup Vinegar 2 Cloves Garlic Minced 1 Onion Chopped
Mix all ingredients together in a container with any meat you choose chicken, pork, beef venison etc... Let the meat marinade overnight or longer. Four times this amount will make a galon jug of Speedies.
Dutch Oven Lasagne
1lb. lean ground beef
23oz. jar of spaghetti sauce
1 lb. sausage
3/4 lb. shredded mozzarella cheese
3 eggs
2 1/4 cup riccotta cheese
1/4 cup grated parmesan cheese
13 dry lasagne noodles
1 1/2 tsp. oregano
3/4 cup hot water
brown beef/sausage - drain fat
mix together spaghetti sauce and browned beef/sausage
in another bowl combine the ricotta cheese, parmesan cheese,mozzerella cheese,eggs an oregano - mix well
layer the lasagne in the dutch oven as follows: Break up four lasagne noodles into large pieces and place them on the bottom of dutch oven.
spread about 1/3 of meat mixture over noodles
spread 1/2 of cheese mixture over meat mixture
break up 5 lasagne noodles and place over the previous layers
spread 1/2 of the remaining meat mixture over the noodles
spread the remaining cheese mixture over the meat mixture
break up remaining lasagne noodles and place on top of previous layers
spread the remaining meat mixture over the noodles
spread some mozzerella cheese on top
pour water all around the inside edges of dutch oven. cover and place inside the EZ Campfire Oven cook at 350 degrees until hot and bubbly then remove cover of dutch oven until cheese is golden brown
